Monster Cookies
With creamy peanut butter, chocolate chips, M&Ms and a sprinkle of oats, monster cookies are always a hit. This base recipe is great as-is for classic monster cookies or feel free to mix up the add-ins for a seasonal version!

Ingredients
1/2 cup unsalted butter (one stick), softened to room temperature
1/2 cup granulated sugar
1/2 cup brown sugar, lightly packed
1/2 cup creamy peanut butter, softened to room temperature (I like to use an all-natural peanut butter with no additional sugar based on the amount of sugar in the recipe)
1 large egg at room temperature
1 1/2 teaspoons pure vanilla extract
1 cup all-purpose flour, spooned & leveled
1/4 teaspoon fine sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup M&M candies
3/4 cup old-fashioned rolled oats
3/4 cup semi-sweet chocolate chips
Instructions
Pre-heat oven to 350 °F and prep a baking sheet by lining it with a silicone baking mat or parchment paper.
In a medium sized bowl, whisk together dry ingredients (flour, baking powder, baking soda, salt) and set aside.
In a stand mixer fitted with a paddle attachment or with a hand mixer, cream butter and sugars on medium speed for 2-3 minutes until light and fluffy, scraping down the sides as needed.
Add the egg and beat for a minute to incorporate then add vanilla and peanut butter; beat until smooth.
Add the dry ingredients and mix on low until just combined, scrape down the sides with a spatula and use the spatula to finish mixing to ensure everything is incorporated evenly.
Fold in the oats, chocolate chips and m&ms then chill the dough for an hour.
Using a medium sized cookie scoop or a spoon, drop two rows of four cookie dough balls evenly spaced onto the prepared baking sheet and bake for 10-12 minutes until just set.
Let the cookies cool for a few minutes before serving, then enjoy!

These cookies are a great option for a seasonal or holiday party as you can adapt the add-ins pretty easily. A few fun ideas: Add mini Cadbury eggs for a Spring treat, red, white and blue M&Ms for your next 4th of July party or Christmas m&ms with some holiday sprinkles for your holiday cookie box!
It’s important to not overbake these cookies as it helps them stay soft when they cool- keep the timer on the lower end of the range for smaller cookies and bake until just set but not browning.
If you’re in a rush you can bake the cookies without chilling the dough, they just might spread out more on the pan so if you like a thicker cookie that’s chewy on the inside and crisp on the edges, chilling the dough is an important step.
